I have found a ton of great ways to use leftover almond pulp after making almond milk. This almond pulp cookies recipe is my favorite. After you try this recipe, check out my entire list of almond pulp ideas.
The best part about this recipe, is that there is no specific recipe. Add the almond pulp to a mixer, add any nuts, seeds chocolate chips, or dried fruit then combine into a ball using a nut butter and oatmeal to create the right texture.

Almond Pulp Cookies
- 1.5 cups almond pulp
- 1/3 cup chia
- 1/3 cup flax seed
- 1/3 cup pumpkin seed
- 1/2 cup craisin
- 1/2 cup dark chocolate chips
- 3 Tablespoon 100% pure maple syrup
- 1/2 of the small jar of peanut butter
- 3 cups oatmeal
- Mix in a mixer until combined. Roll into balls and eat like cookie dough or flatten and freeze to make a cold cookie.
